Ingredients:
- 6 - hard-cooked eggs
- 1/4 cups - mayonnaise
- 1 teaspoons - prepared mustard
- 1 teaspoons - vinegar
- - parsley sprigs or paprika for garnish, optional
Directions:
Halve the hard-cooked eggs lengthwise and remove the yolks. Place yolks in a bowl; mash with a fork.
Add mayonnaise, mustard, and vinegar; mix well. Season with salt and pepper.
Stuff egg white halves with yolk mixture, using two spoons - one to scoop up the filling and the other to scrape the filling off the spoon into the egg white half.
Garnish with a sprinkling of paprika or a sprig of parsley, if desired.
Italian-Style:
Omit mayonnaise, mustard and vinegar from above; substitute 1/4 cup creamy Italian salad dressing and 2 tablespoons grated Parmesan cheese to mashed yolks.
Indian-Style:
Omit mustard and vinegar from basic option above; add 1/4 cup finely chopped peanuts and 1/2 teaspoon curry powder to yolk mixture.
Mexican-Style:
Prepare as above, but omit mustard and vinegar. Add 2 tablespoons canned diced green chili peppers, 1 tablespoon chopped pitted ripe olives, 1/2 teaspoon chili powder, and 1/8 teaspoon ground red pepper to yolk mixture. After stuffing egg whites with mixture, garnish with sliced pitted ripe olives or cilantro and serve with salsa, if desired.
