Barbecued Garlic Shrimp

Ingredients:

  1. 1 1/4 cups - oleo (2-1/2 sticks)
  2. 12 - green onions chopped
  3. 15 cloves - garlic minced
  4. 2 cups - dry white wine
  5. 6 tablespoons - fresh lemon juice
  6. 1 1/2 pounds - large unpeeled shrimp
  7. 1 cups - minced fresh parsley
  8. 3 tablespoons - minced fresh parsley
  9. - hot pepper sauce (such as Tabasco)
  10. 3 tablespoons - minced green onion tops
  11. - lemon wedges
  12. - Bamboo skewers soaked in water for 30 minutes

Directions:

Melt oleo in heavy skillet over medium low heat. Add the 12 chopped green onions and saute for 3 minutes. Add wine and simmer for 15 minutes.

Mix in lemon juice; season with pepper. Transfer to a large bowl and let cool.

Cut shrimp down the back through the shell (do not peel). Remove veins; add shrimp and 1 cup of parsley to garlic mixture and toss well. Cover and chill for 6 hours, turning occasionally.

Remove shrimp from marinade and thread onto prepared skewers. Simmer marinade in a saucepan until thick, stirring (about 12 minutes). Strain through sieve set over bowl, pressing on solids. Season with pepper sauce and salt.

Spoon mixture into small ramekins, sprinkle with minced onion and the 3 tablespoons of parsley; place 1 ramekin on each plate.

Place shrimp on grill and cook until just pink, turning once (about 3 minutes). Place on plates, and garnish with lemon wedges to serve.
