Bangalore restaurant style Veg pulao

Ingredients:

  1. 1/2 teaspoons - Cumin
  2. teaspoons - whole dhania seeds
  3. 1/2 sticks - cinnamon
  4. 5 pieces - Cloves
  5. 3 pieces - whole elaichi
  6. 1 teaspoons - Saunf
  7. 1/2 teaspoons - Cumin
  8. teaspoons - whole dhania seeds
  9. 1/2 sticks - cinnamon
  10. 5 pieces - Cloves
  11. 3 pieces - whole elaichi
  12. 1 teaspoons - Saunf

Directions:

Veg pulao recipe -
In a pan, with a teaspoon of oil, roast the following -
whole dhania seeds,
cinnamon,
cloves,
whole elaichi,
Saunf,
green chillies,
ginger,
garlic,
cilantro leaves and
mint leaves ( take a good helping of these leaves).
Lightly roast for about 4-5 mins, then add a tablespoon of grated coconut. Take all of these and grind them once they are a little cool.
In the meantime, prep the following veggies -
Slice the veggies about 2 inches long and thin - carrots, potatoes, green beans.
Now, add enough oil in your instant pot or pressure cooker, saute finely chopped onions. Add to this, a bay leaf, then one tomato and saute all of this. Once the onions are golden brown, add the ground masala and your veggies and some peas.
Add salt to taste, about 2 teaspoons of yogurt, a teaspoon of ghee. Mix well and add basmati rice and water.
When I make pulav in my instant pot, I add 1:1.25 cups of water and cook on manual setting for 6 mins.
