Bananas and Mocha Cream

Ingredients:

  1. 2 - large bananas sliced into 1/2-inch coins, divided
  2. 6 ounces - low-fat cream cheese
  3. 6 ounces - low-fat cottage cheese
  4. 1/3 cups - sucanat
  5. 2 tablespoons - prepared strong coffee
  6. 1 teaspoons - vanilla extract
  7. 2 tablespoons - dark chocolate grated for garnish

Directions:

1. Layer 1/2 the banana slices in the bottom of an 8-inch square pan; set aside.

2. In a food processor or mixing bowl, combine cheese, sucanat, coffee and vanilla until well blended.

3. Spread 1/2 the coffee-cream mixture over the banana slices; top with remaining banana slices and then remaining coffee-cream mixture.

4. Top with grated chocolate and chill until ready to serve.
