Brief Description
This is kind of a cross between banana bread and poundcake. It makes a huge cake, so I often give half of a cake as a hospitality gift when visiting people and freeze the other half for later use.

Number of Servings:
Ingredients:
- 1 sticks - Butter softened
- 1 teaspoons - Baking Powder
- 1 1/2 cups - Sugar
- 1 teaspoons - Baking Soda
- 1 tablespoons - Vanilla
- 2 cups - Flour
- 2 whole - Eggs
- 2 tablespoons - Buttermilk
- 1 cups - Bananas mashed
- 1 cups - Pecan Pieces
- 1 cups - Brown Sugar
- 6 tablespoons - Butter softened
- 1 cups - Coconut
- 4 tablespoons - Milk
- 1/4 cups - Pecan Pieces
Directions:
Preheat oven to 325°. Grease and flour a 10" tube or bundt pan.
Cream butter and sugar together until light and fluffy. Stir in vanilla. Add eggs and bananas and beat until smooth. Sift baking powder, soda, and flour together and add to batter alternately with buttermilk. Stir in pecans. Pour into pan and bake for 40-50 minutes, until cake tester inserted in the center comes out clean. Remove cake and turn oven temperature up to 400°.
Topping:
Mix topping ingredients until well blended and spread on hot cake. Return cake to oven and bake until topping is browned - about 10 minutes. Watch carefully to see that it doesn't burn. Remove from oven and allow cake to cool completely before removing from pan. Turn out onto serving plate.
