Ingredients:
- 1 1/4 cups - flour
- 1 cups - oats
- 2/3 cups - sugar
- 1 1/2 teaspoons - baking powder
- 1 teaspoons - baking soda
- 1/2 teaspoons - salt
- 1 - egg
- 1 3/4 cups - ripe bananas mashed
- 1/3 cups - butter or margarine melted
- 1 cups - cranberries chopped
Directions:
In large bowl beat together egg, bananas, and melted butter until smooth. In another bowl combine first six ingredients and mix well. Pour dry ingredients into wet ingredients and stir until thoroughly combined. Gently stir in cranberries until blended.
Spoon the batter into muffin pan, generously sprayed with baking spray, filling each muffin cup almost to the top. Bake at 375 degrees F for 20-25 minutes or until top springs back when lightly touched.
