Banana Bread

  1. 1 cups - sugar
  2. 1/2 cups - shortening
  3. 2 - eggs
  4. 1 teaspoons - vanilla
  5. 3 - bananas
  6. 2 cups - flour
  7. 1 teaspoons - baking soda
  8. 1/4 teaspoons - salt


Beat together the sugar and shortening until creamed together.

Add the beaten eggs and vanilla, stirring well; then fold in the mashed bananas.

Stir in the remaining ingredients (flour, baking soda, and salt) until all is well blended.

Pour batter into a greased 9-by-5-inch bread pan and bake at 350° F for 45-60 minutes, until a toothpick inserted in center of bread comes out clean. (Set timer for 45 minutes, check on it, and then continue baking for 5 minutes more and checking again until cooked through).
