    VARIATION: Chunky Monkey Muffins: add: 1 cup chocolate chips and 1 cup Valencia peanut butter (or almond butter) omit blueberries

Ingredients:

  1. 3 cups - blanched almond flour
  2. 1/4 teaspoons - sea salt
  3. 1 1/2 teaspoons - baking soda
  4. 2 tablespoons - grapeseed oil
  5. 3 each - eggs, large each egg = 1/4 cup
  6. 2 cups - very ripe bananas (4-5) mashed
  7. 1 cups - blueberries can be frozen
  8. 1 teaspoons - Stevita spoonable stevia optional

Directions:

Mix it all up. Put it in 24 stoneware muffin pans. Bake 35-40 minutes at 350, let cool in pan 30 minutes.
