Baked Wings with Flavor Variations

Ingredients:

  1. 4 pounds - chicken wings
  2. 2 tablespoons - cooking oil (canola, olive, grapeseed)
  3. 1 tablespoons - salt
  4. 1 teaspoons - pepper
  5. 1 cups - thawed frozen orange juice concentrate (no calcium added)
  6. 1 teaspoons - chipotle chili powder
  7. - orange zest optional, for topping
  8. 3/4 cups - tomato paste
  9. 1/4 cups - olive oil
  10. 1 cups - grated mozzarella for adding while baking
  11. 3/4 cups - diced pepperoni for adding while baking
  12. 1 cups - cherry jam
  13. 2 tablespoons - fresh lime juice
  14. - lime zest or lime wedges optional, for garnish
  15. 1 cups - red pepper jelly
  16. 1 teaspoons - smoked paprika
  17. - chopped fresh jalapeno optional, for garnish
  18. 1 cups - thick teriyaki sauce
  19. 1 teaspoons - grated fresh ginger
  20. - sesame seeds optional, for garnish
  21. 1 cups - honey
  22. 1/4 cups - fresh lemon juice
  23. - lemon zest, lemon wedges and fresh oregano optional, for topping and garnish
  24. 1 cups - pomegranate molasses
  25. 1 tablespoons - ground coriander
  26. 1 tablespoons - sugar
  27. - pomegranate seeds optional, for topping or garnish

Directions:

Position oven rack in top third of oven; preheat to 450 degrees F. Line a large rimmed baking sheet with aluminum foil. Set a wire rack inside the baking sheet and coat with cooking spray.

Cut off and discard wingtips from chicken wings; separate the flats (parts that don't look like drumsticks) from the drumettes and pat dry.

In a large bowl, toss wings with cooking oil, salt and pepper. Arrange on prepared rack in a single layer. Bake until skin is crispy, about 45 minutes.

Meanwhile, in a large bowl, combine glaze ingredients from your chosen flavor combo (for pepperoni pizza version: mix only the tomato paste and olive oil together). Transfer 1/4 cup of glaze to a small bowl and toss the wings in the remaining glaze to coat them well.

Arrange wings on rack again in a single layer. (At this point, if making pepperoni pizza flavored wings, press the mozzarella cheese and diced pepperoni onto the top of the wings). Bake until glaze is shiny and browned in spots and chicken is cooked through, about 10 minutes. Season.

Transfer wings to large platter; dab with reserved glaze, and sprinkle with desired toppings or garnish.
