Baked Spinach Artichoke Dip

Ingredients:

  1. 1 cups - mayonnaise or salad dressing
  2. 1 cups - freshly grated Parmesan cheese
  3. 1 cans - 14 oz. artichoke hearts drained and coarsely chopped
  4. 1 boxes - 9 oz. Green Giant frozen spinach thawed and squeezed to drain
  5. 1/2 cups - chopped red bell pepper
  6. 1/4 cups - shredded Monterey Jack or mozzarella cheese
  7. - toasted baguette slices or assorted crackers for serving, as desired

Directions:

Heat oven to 350 degrees F. Mix mayonnaise and Parmesan cheese together. Stir in artichokes, spinach and bell pepper.

Spoon mixture into 1-quart casserole dish, and sprinkle with Monterey Jack cheese.

Cover and bake about 20 minutes or until cheese is melted. Serve warm with baguette slices or crackers.
