Substitute one cup loosely packed, coarsely chopped fresh spinach leaves for frozen spinach. Make and refrigerate this dip up to 24 hours ahead; bake as directed.

Ingredients:
- 1 cups - mayonnaise or salad dressing
- 1 cups - freshly grated Parmesan cheese
- 1 cans - 14 oz. artichoke hearts drained and coarsely chopped
- 1 boxes - 9 oz. Green Giant frozen spinach thawed and squeezed to drain
- 1/2 cups - chopped red bell pepper
- 1/4 cups - shredded Monterey Jack or mozzarella cheese
- - toasted baguette slices or assorted crackers for serving, as desired
Directions:
Heat oven to 350 degrees F. Mix mayonnaise and Parmesan cheese together. Stir in artichokes, spinach and bell pepper.
Spoon mixture into 1-quart casserole dish, and sprinkle with Monterey Jack cheese.
Cover and bake about 20 minutes or until cheese is melted. Serve warm with baguette slices or crackers.
