Baked Risotto

Ingredients:

  1. 4 tablespoons - butter
  2. 1 tablespoons - olive oil
  3. 2 - medium onions chopped
  4. 2 pinchs - saffron
  5. 2 tablespoons - white wine
  6. 3 cups - chicken stock
  7. 2 cups - long grain rice
  8. 2 cups - Parmesan cheese
  9. 1 cups - water

Directions:

Saute onions in butter. Heat broth and 1 cup water to simmer.

Stir rice into onions and cook 5 minutes. Increase heat and add broth all at once; add wine and saffron. Cover and cook 30 minutes.

Stir 1-1/2 cups Parmesan into rice, turn into a buttered baking dish; sprinkle 1/2 cup cheese on top and bake for 20 minutes.
