Baked Potato Soup

Ingredients:

  1. 4 - large baking potatoes
  2. 2/3 cups - butter or margarine
  3. 2/3 cups - all-purpose flour
  4. 6 cups - milk
  5. 3/4 teaspoons - salt
  6. 1/2 teaspoons - pepper
  7. 4 - green onions chopped, divided
  8. 12 slices - bacon cooked until crisp, crumbled, divided
  9. 1 1/4 cups - shredded cheddar cheese divided
  10. 8 ounces - sour cream

Directions:

Bake potatoes, and let cool. Cut potatoes in half lengthwise and scoop out pulp.

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.

Add potato pulp, salt, pepper, 2 tablespoons green onion, 1/2 cup crisp crumbled bacon and 1 cup cheese. Cook until thoroughly heated; stir in sour cream.

Add extra milk if needed, for desired thickness.

Serve garnished with remaining onion, bacon and cheese.
