Ingredients:
- 1 pounds - chicken breast tenders about 12 pieces
- 1/2 cups - low-fat buttermilk
- 1/2 cups - cornflakes, saltines or reduced-fat cheese crackers crushed
- 1/2 cups - seasoned bread crumbs
- 1 teaspoons - paprika
- 1/2 teaspoons - garlic powder
- 1/2 teaspoons - salt
- 1 pinchs - cayenne pepper
- 1 1/2 tablespoons - vegetable oil
Directions:
Preheat oven to 400° F. In a medium bowl, combine chicken and buttermilk. Cover and refrigerate 10-15 minutes. Combine cornflakes (or crackers), bread crumbs, paprika, garlic powder, salt, and cayenne pepper in a large Ziploc bag. Drain chicken, discarding liquid, and add 5 tenders to the bag; shake to coat. Repeat with remaining chicken.
Cover the bottom of a shallow non-stick baking pan with oil. Add chicken in a single layer. Bake approximately 4 minutes; turn chicken, bake another 4 minutes, or until thoroughly cooked.
Serve with light ranch dip or hot salsa.
