Baked Caramel Corn

Ingredients:

  1. 6 quarts - popped corn
  2. 1 cups - butter or margarine
  3. 2 cups - firmly packed brown sugar
  4. 1/2 cups - light or dark corn syrup
  5. 1 teaspoons - salt
  6. 1/2 teaspoons - baking soda
  7. 1 teaspoons - vanilla

Directions:

Preheat oven to 250. Coat the bottom and sides of a large roasting pan with a nonstick spray.

Place popped popcorn in roasting pan.

In a heavy pan, slowly melt butter; stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly; boil without stirring for 5 minutes. Remove from heat; stir in baking soda and vanilla.

Gradually pour over popcorn, mixing well. Bake 1 hour, stirring every 15 minutes.

Remove from oven; cool completely. Break apart.
