Ingredients:
- 1 teaspoons - Vegetable Oil
- 1 whole - Shallot Small
- 2 tablespoons - Calvados Brandy
- 2/3 cups - Apple Juice
- 1/4 cups - White wine vinegar
- 1/4 cups - Maple Syrup
- 1 whole - Apple
- 1/2 cups - Dried Cranberries
- 2 pounds - Brie Cheese
Directions:
- Peel and dice apples. Heat oil in medium-sized fry pan and saute shallot. Deglaze with calvados and add apple juice, white wine vinegar, and maple syrup.
- Add apple to pot and bring to simmer, cook for 8 minutes then add dried cranberries and cook for another 5 minutes or until apples are soft. Reduce liquid down to a syrup.
- Season brie with salt and pepper and bake brie in a 400 degree oven for 8 minutes or until soft and centre. Top brie with large spoon of campote.
- Serve with warm baguette
