Bacon-wrapped Jalapeno Poppers

    Use a good flavored bacon, since it will be a dominant part of the taste. The jalapenos will be spicy enough for most people, so don't go crazy heating up the cheese mixture. It's supposed to be a counterpoint to the other elements. If serving at a party, you can make these several hours ahead, then wrap and refrigerate till you're ready to cook.

Ingredients:

  1. 14 - jalapeno peppers, smallish
  2. 8 ounces - cream cheese softened
  3. 1 cups - sharp cheddar or any kind you like shredded
  4. 1 teaspoons - ground cumin
  5. 1/2 teaspoons - chili powder
  6. 1 pounds - sliced bacon

Directions:

1. Cut jalapenos in half lengthwise, remove seeds and clean.

2. Cut bacon slices in half.

3. Mix cheeses and seasonings, add salt to taste.

3. Divide cheese mixture into jalapeno halves, wrap each with a half slice bacon, and secure with a toothpick.

4. Place poppers on a cookie sheet (line with foil for easy cleanup) and bake until bacon is crisp and brown, about 15-30 minutes at 425 degrees.
