Ingredients:
- 1 tablespoons - Dijon-style mustard
- 1 teaspoons - Cajun seasoning
- - chopped green onion
- - Cajun seasoning
- 2 - English muffins split
- 8 tablespoons - shredded Gruyere cheese
- 8 slices - cooked bacon
- 4 - hard-cooked eggs sliced
- 1/2 cups - heavy cream
Directions:
On a baking sheet arrange the split English muffins, cut side up.
Layer each one with 2 Tbsp. shredded cheese, 2 slices bacon, and 1 sliced egg. Broil for 2 minutes.
Meanwhile, in a small saucepan over medium heat, combine the cream, mustard, and Cajun seasoning. Heat until thickened; remove from heat and spoon over toast.
Top with chopped green onions and Cajun seasoning, if desired.
