Bacon, Egg and Cheese Toasts

Ingredients:

  1. 1 tablespoons - Dijon-style mustard
  2. 1 teaspoons - Cajun seasoning
  3. - chopped green onion
  4. - Cajun seasoning
  5. 2 - English muffins split
  6. 8 tablespoons - shredded Gruyere cheese
  7. 8 slices - cooked bacon
  8. 4 - hard-cooked eggs sliced
  9. 1/2 cups - heavy cream

Directions:

On a baking sheet arrange the split English muffins, cut side up.

Layer each one with 2 Tbsp. shredded cheese, 2 slices bacon, and 1 sliced egg. Broil for 2 minutes.

Meanwhile, in a small saucepan over medium heat, combine the cream, mustard, and Cajun seasoning. Heat until thickened; remove from heat and spoon over toast.

Top with chopped green onions and Cajun seasoning, if desired.
