Notes:
For variations, one could use other grated cheese in place of the bleu cheese, or sub prosciutto, sundried tomatoes, or chopped chiles for the bacon. These freeze well. After shaping, place unbaked biscuits on a parchment-lined cookie sheet and freeze. When frozen, remove and place in a freezer bag. Tangy pepper jelly is a nice serving accompaniment to the biscuits.

Ingredients:
- 2 cups - all-purpose flour plus 2 tbsp.
- 1 tablespoons - brown sugar
- 4 teaspoons - baking powder
- 1 teaspoons - salt
- 1/2 cups - chopped, cooked apple-wood-smoked bacon
- 1/2 cups - crumbled bleu cheese
- 1 cups - heavy cream cold
Directions:
Combine flour, sugar, baking powder and salt; mix well with a whisk. Fold in the bacon and bleu cheese. Add cream gradually; mix until just combined, being careful to not overhandle the dough. Add only enough cream to form a cohesive mass. Pat the dough into a rectangle and cut in half lengthwise. Then cut three rows across to make eight biscuits, with no waste. Shape and place biscuits on parchment-lined baking sheet pans. Bake in a 350-degree oven until golden brown, about 15-20 minutes (or 20-25 minutes if frozen - see note). Cool on pans, then transfer to racks to cool.
