Bacon and Spinach Quiche

Ingredients:

  1. 10 slices - bacon cooked, crumbled
  2. 1 1/2 cups - chopped onion
  3. 1 1/2 cups - sliced mushrooms
  4. 1 cloves - garlic
  5. 2 packages - chopped spinach thawed, pressed
  6. 8 - large eggs beaten
  7. 8 ounces - sour cream
  8. 1 1/2 cups - half-and-half
  9. 2 cups - shredded mozzarella cheese
  10. 1 cups - shredded sharp cheddar cheese
  11. 4 ounces - diced pimiento drained
  12. 1/2 teaspoons - salt
  13. 1/4 teaspoons - pepper

Directions:

Saute onion, mushrooms, and garlic.

Whisk together eggs, sour cream and half-and-half.

Add bacon and onion mixture, cheeses and pimiento.

Pour all into lightly browned pie shell and bake for 30 to 40 minutes at 350 degrees F.
