Ingredients:
- 2 pounds - 2 to 3 lbs red potatoes scrubbed and diced
- 8 slices - Fully cooked bacon
- 1/4 cups - Shallots Finely chopped
- 1/4 cups - Parsley Finely chopped
- 1/2 cups - Blue cheese Crumbled
- 2 whole - Hard-boiled eggs Peeled
- 2/3 cups - Olive oil For dressing
- 1/3 cups - Cider vinegar For dressing
- 1 tablespoons - Stone ground mustard
- 1 tablespoons - Honey
- 2 teaspoons - Lemon zest
Directions:
1. Cook diced potatoes in 6 to 8 C boiling salted water 8 to 10 min or until just tender. Drain well.
2. In the meantime, heat bacon in microwave according to package directions. Let cool; then chop coarsely.
3. Whisk dressing ingredients together in a large bowl. Toss warm potatoes in dressing. Add bacon, shallots, parsley and blue cheese; toss gently to combine.
4. Serve at room tempearture or chill until serving time. Chop eggs and sprinkle over salad right before serving.
