Ingredients:
- 6 cups - baby spinach use 6-8 cups, as desired, washed and dried
- 1 - section (about 3 inches) jicama peeled, sliced, cut into matchsticks
- 2 - oranges peeled, cut or broken into sections
- 10 - strawberries or 12, as desired, washed, sliced
- 3 tablespoons - apple cider vinegar or other light vinegar
- 1/3 cups - fresh orange juice
- 2 teaspoons - honey
- 1 teaspoons - Dijon mustard
- 2 teaspoons - finely minced shallots
- 5 tablespoons - olive oil
- 1/4 teaspoons - kosher salt
- - water as needed; taste first and decide
Directions:
Place spinach in a salad bowl.
To make dressing, in a bowl whisk together the vinegar, juice, honey, mustard, shallots, oil and salt.
Just before serving, drizzle vinaigrette over the salad. Add oranges and strawberries and drizzle more over them.
Serve immediately.
