Baby Potato Salad

Ingredients:

  1. 1 3/8 pounds - Baby Potatoes - Red, Gold or Medley
  2. 2 tablespoons - Extra virgin olive oil
  3. 2 teaspoons - Adams Reserve All Purpose Seasoning
  4. 1/2 cups - Mayonnaise (real mayo)
  5. 1 cups - Celery Chopped
  6. 1/2 cups - Red bell pepper Chopped
  7. 1/2 cups - Green onion, including tops Chopped

Directions:

1. Cook whole baby potatoes in a large pot of boiling water under tender, about 8-12 min. Allow potatoes to cool slightly and cut in half; toss w/ olive oil and seasoning. Set aside 10 or 15 minutes.
2. Stir in mayonnaise, celery and green onions. Season to taste.
3. Serve at room temperature or cover and refrigerate to serve chilled.
