    TO COOK WHEAT BERRIES: For every 1 C of wheat berries you are cooking, add to pan with 3-1/2 C water and 1/2 tsp salt. Bring to a boil, then reduce heat and simmer, covered, about 1 hour or until tender. NOTES: *In testing this recipe, 2 tsps of cumin, not 1, were accidentally added and the flavor was good. *Add steak sauce to taste; we added about 3/4 of a 10-oz bottl in testing and thought that amount worked well. *We used 2 cans of kidney beans, undrained. *We cooked about 1 1/2 C wheat berries, which produced about 3 C cooked wheat berries. You can use more than 1 C wheat berries to stretch the chili.

Ingredients:

  1. 1 whole - Onion Chopped
  2. 1 whole - Carrot Chopped
  3. 2 stalks - Celery Chopped
  4. 1/4 cups - Green bell pepper Chopped
  5. 1/4 cups - Red bell pepper Chopped
  6. 4 cloves - Garlic Minced
  7. 1 teaspoons - Ground cumin (see note)
  8. 1 teaspoons - Ground coriander
  9. 1 pinchs - Crushed red pepper flakes
  10. 1 cans - 6-oz Tomato paste
  11. 2 cups - Tomatoes Chopped
  12. 1/4 cups - White wine
  13. - About 1 C A-1 Steak Sauce (see note)
  14. 5 slices - Turkey bacon
  15. 1 tablespoons - Vegetable oil
  16. 1 1/2 pounds - Lean ground turkey
  17. 1 tablespoons - Oregano
  18. 2 teaspoons - Thyme
  19. 1 teaspoons - Rosemary Crushed
  20. 1 tablespoons - Garlic powder
  21. 1 tablespoons - Onion powder
  22. 2 cups - Cooked kidney beans (see note)
  23. 1 tablespoons - Fresh cilantro Chopped
  24. 1 tablespoons - Fresh parsley Chopped
  25. - Kosher salt, to taste
  26. - Fresh ground pepper, to taste
  27. 1 cups - Cooked wheat berries (see note)

Directions:

1. In a large pot over medium heat, saute the onion, carrot, celery and bell pepper for about 5 min.; you may need to add a little oil to the pot or some broth or water to keep the vegetables from sticking; in testing we used a small amount of vegetable oil.
2. Add the garlic, cumin, coriander and red pepper flakes and cook for abut a minute. Add tomato paste and cook until starts turning dark. Add tomatoes, wine and steak sauce and simmer.
3. White tomato mixture is simmering, cook turkey bacon in vegetable oil in a large skillet over medium heat until crisp. Remove bacon from heat and place on paper towels. Cook ground turkey in bacon drippings until brown; drain. Stir in oregano, thyme, rosemary, garlic powder and onion powder.
4. Chop bacon and add with browned turkey mixture to tomato mixture. Continue to simmer until vegetables are tender and flavors are well blended.
5. Stir in beans, cilantro and parsley and season to taste w/ salt and pepper. Heat through and serve over wheat berries.
