Avocado Quiche

Ingredients:

  1. - 9-inch unbaked pie shell
  2. 1 - egg white slightly beaten
  3. 4 slices - bacon cooked, crumbled
  4. 2 cups - grated Swiss cheese divided
  5. 4 - eggs
  6. 1 cups - half-and-half OR light cream
  7. 1/4 teaspoons - salt
  8. 1/8 teaspoons - nutmeg
  9. - dash of pepper
  10. 1 - avocado peeled, pitted, sliced
  11. 2 tablespoons - lemon juice
  12. 3 - cherry tomatoes halved, for garnish

Directions:

Brush inside of pie shell with egg white; refrigerate. Preheat oven to 375 degrees F.

Reserve 5 slices of the avocado (sprinkle with lemon juice, and refrigerate, covered).

Cube remaining avocado; layer in bottom of prepared pie shell on top of crumbled bacon and 1 cup of grated cheese. Sprinkle lightly with salt and pepper. Sprinkle evenly with remaining cup of cheese.

In medium bowl, stir together with wire whisk the eggs, half -and-half, salt, nutmeg and pepper just until combined. Slowly pour into pie shell.

Bake 35 to 40 minutes or until quiche is puffy and set in center. Remove to rack to cool for 10 minutes.

Garnish before serving with avocado slices and halved cherry tomatoes.
