Ingredients:
- - juice of 1 lemon
- 1/4 cups - mayonnaise
- 1 tablespoons - water
- 1 - hard-cooked egg yolk
- - salt and pepper to taste
- 5 - hard-cooked eggs chopped
- 1 - avocado peeled, chopped
- 1/4 cups - red onion sliced
- - tomato slices for serving
- 1/4 cups - toasted walnuts
- - lemon zest
Directions:
In a large bowl stir together lemon juice, mayonnaise and water. Using a fork, mash in the hard-cooked egg yolk. Season to taste with salt and pepper.
Add the chopped hard-cooked eggs, avocado and the red onion; stir to coat.
Serve mixture over tomato slices, topped with walnuts and lemon zest. Season with additional salt and pepper, if needed.
