Avocado Egg Salad

Ingredients:

  1. - juice of 1 lemon
  2. 1/4 cups - mayonnaise
  3. 1 tablespoons - water
  4. 1 - hard-cooked egg yolk
  5. - salt and pepper to taste
  6. 5 - hard-cooked eggs chopped
  7. 1 - avocado peeled, chopped
  8. 1/4 cups - red onion sliced
  9. - tomato slices for serving
  10. 1/4 cups - toasted walnuts
  11. - lemon zest

Directions:

In a large bowl stir together lemon juice, mayonnaise and water. Using a fork, mash in the hard-cooked egg yolk. Season to taste with salt and pepper.

Add the chopped hard-cooked eggs, avocado and the red onion; stir to coat.

Serve mixture over tomato slices, topped with walnuts and lemon zest. Season with additional salt and pepper, if needed.
