Avocado bundles

Ingredients:

  1. 4 whole - avocadoes
  2. 1 teaspoons - lemon juice
  3. 2 ounces - goat cheese
  4. 1 teaspoons - paprika
  5. 1 ounces - prosciutto thinly sluced

Directions:

1. Peel each avocado and remove the stone, then slice each avocado into 6 slices.
2. Toss the slices gently in lemon juice.
3. Cut a small crescent shape in the avocado slices and stuff with a blob of goat cheese.
4. To hold the goat cheese in place, wrap each slice with a prosciutto slice.
5. Refrigerate until ready to serve.
