Ingredients:
- 6 tablespoons - real butter
- 1/2 cups - flour
- 2 teaspoons - salt
- 1/2 teaspoons - pepper
- 1/2 teaspoons - nutmeg or more, if you like
- 2 cups - milk
- 2 cups - grated cheddar cheese
- 2 packages - 10 oz. frozen spinach thawed, well drained
- 6 - eggs separated
Directions:
Preheat oven to 325 degrees F.
In a saucepan, melt butter and blend in flour and spices. Add milk, stirring until blended and thick.
Add cheese to mixture and stir until well blended. Stir in egg YOLKS and spinach.
In a mixing bowl, beat egg whites until stiff; fold into spinach mixture.
In a 9-x-13-x-2-inch oven-proof casserole dish, pour the spinach mixture. Bake for 30 minutes.
Cool and cut into squares. When the souffle cools, it will fall a little, but that's okay. Reheat when needed. Can be made ahead.
