    May substitute 1 Tbs mayonnaise per egg yolk if you prefer to not have raw eggs/. Yield 1 2/3 cupfuls icing or enough for a single 8- or 9-inch layer cake, increase for 2 or 3 layers. Soooo good on a chocolate or yellow butter cake. Try spreading jam on bottom layer, then frosting before stacking layers.

Ingredients:

  1. 1/4 cups - Butter soft
  2. 1 1/2 cups - Powdered sugar
  3. 2 - Egg yolks
  4. 1/4 cups - Half n half or Whole milk
  5. 1 teaspoons - Vanilla extract or 1 Tbs of liquer
  6. 2 squares - Hershey's Baking Chocolate melted, cooled slightly
  7. 1/8 teaspoons - salt

Directions:

Cream butter; add sugar gradually, while beating constantly. Add egg yolks, milk or cream and vanilla. Add melted baking chocolate and salt, and beat thoroughly. Beat 3 to 5 minutes or until of right consistency to spread. (This is a medium-dark icing that does not dry out even when several days old.)
