  1. 3 cups - Buttermilk
  2. 1/2 cups - Vegetable oil
  3. 2 whole - Large eggs
  4. 2 cups - Flour
  5. 2 cups - Coarse stone-ground cornmeal, yellow or white
  6. 1 cups - Sugar
  7. 2 tablespoons - Baking powder
  8. 2 teaspoons - Baking soda
  9. 2 teaspoons - Salt


Heat oven to 325 degrees. Butter a 9X13-inch baking pan.

Combine buttermilk, oil & eggs in a bowl and whisk to combine well.

In a large bowl, stir together flour, cornmeal, sugar, baking powder, baking soda & salt.

Pour the liquid ingredients into the dry ingredients and whisk together until combined. Pour the batter into the prepared pan and place on the middle rack in the oven.

Bake for 45 min. to 1 hour, until the top is golden brown and a toothpick comes out clean when inserted into the middle.
