Asparagus Quiche

Ingredients:

  1. 1/2 cups - butter
  2. 1/2 pounds - fresh asparagus cut in 1-inch pieces
  3. 1 - medium red pepper diced
  4. 8 cups - white bread cut into 1-inch cubes
  5. 2 cups - shredded cheese such as cheddar or swiss
  6. 8 - eggs
  7. 2 1/2 cups - milk
  8. 1/2 teaspoons - salt

Directions:

Melt butter; add vegetables and stir until crisp, about 3 to 5 minutes.

Layer bread cubes, half of cheese, and all of veggies in a 13-by-9-inch baking dish.

Mix together eggs, milk and seasoning. Pour over veggies. Refrigerate overnight.

Bake at 350 degrees F for 45 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
