Ingredients:
- 1/2 cups - butter
- 1/2 pounds - fresh asparagus cut in 1-inch pieces
- 1 - medium red pepper diced
- 8 cups - white bread cut into 1-inch cubes
- 2 cups - shredded cheese such as cheddar or swiss
- 8 - eggs
- 2 1/2 cups - milk
- 1/2 teaspoons - salt
Directions:
Melt butter; add vegetables and stir until crisp, about 3 to 5 minutes.
Layer bread cubes, half of cheese, and all of veggies in a 13-by-9-inch baking dish.
Mix together eggs, milk and seasoning. Pour over veggies. Refrigerate overnight.
Bake at 350 degrees F for 45 minutes. Sprinkle with remaining cheese and bake 5 more minutes.
