Asparagus Frittata

Ingredients:

  1. 1 - medium red bell pepper sliced
  2. 1/4 pounds - mushrooms sliced
  3. 1 packages - 10 oz. frozen asparagus spears thawed, cut into thirds)
  4. 2 tablespoons - butter
  5. 1/2 cups - chopped onion
  6. 8 - eggs
  7. 1 cups - milk
  8. - salt and pepper
  9. 1 packages - 4 oz. shredded mozzarella cheese
  10. - dried basil leaves

Directions:

Melt butter and saute red pepper, mushrooms, asparagus and onion.

Combine eggs, milk, cheese and spices; pour over sauteed vegetables and bake at 350 degrees F for 20 minutes.
