Ingredients:
- 4 cups - thinly sliced cucumbers (can use mini cucumbers)
 - 1/4 cups - finely sliced red onion
 - 1/4 cups - finely diced red pepper
 - 1/4 cups - rice wine vinegar
 - 1 teaspoons - honey
 - 1 teaspoons - sesame seeds
 - 1/2 teaspoons - toasted sesame oil
 - 1/4 teaspoons - red pepper flakes
 - 1/2 teaspoons - sea salt
 
Directions:
1. Place VERY thinly sliced cucumbers, red onion, red pepper, and sesame seeds into a medium sized bowl, and set aside.
2. In a small bowl, mix together rice wine vinegar, honey, sesame oil, pepper flakes and sea salt until well combined.
3. Add dressing to the bowl with the cucumbers; toss to mix everything well.
4. Serve immediately or cover and let sit in the refrigerator for an hour or two, letting all the flavors blend.
