Asian Chicken and Herb Salad

Ingredients:

  1. 1/3 cups - fresh lime juice
  2. 1/4 cups - fish sauce
  3. 1/4 cups - sugar
  4. 1 - red jalapeno thinly sliced
  5. 1 cloves - garlic minced
  6. 8 ounces - pad Thai rice noodles cooked and rinsed under cold water
  7. 2 cups - shredded rotisserie chicken
  8. 1/2 cups - fresh basil leaves
  9. 1/2 cups - fresh mint leaves
  10. 1/2 cups - fresh cilantro leaves
  11. 2 - scallions thinly sliced at an angle
  12. 1/4 cups - dry-roasted peanuts

Directions:

In a large bowl, mix first 5 ingredients.

Add remaining ingredients, and toss until combined well.
