If you don't have fish sauce, use 3 Tbsp chicken stock with 1 Tbsp soy sauce (to make 1/4 cup).

Ingredients:
- 1/3 cups - fresh lime juice
- 1/4 cups - fish sauce
- 1/4 cups - sugar
- 1 - red jalapeno thinly sliced
- 1 cloves - garlic minced
- 8 ounces - pad Thai rice noodles cooked and rinsed under cold water
- 2 cups - shredded rotisserie chicken
- 1/2 cups - fresh basil leaves
- 1/2 cups - fresh mint leaves
- 1/2 cups - fresh cilantro leaves
- 2 - scallions thinly sliced at an angle
- 1/4 cups - dry-roasted peanuts
Directions:
In a large bowl, mix first 5 ingredients.
Add remaining ingredients, and toss until combined well.
