Ingredients:
- 1 heads - cauliflower
- 2 whole - eggs
- 1 cups - meat of choice (pork is good)
- 1/2 tablespoons - minced ginger
- 1 whole - small onion
- 4 ounces - mushrooms
- 2 whole - scallions/green onions
- 2 tablespoons - fresh cilantro
- 2 tablespoons - fresh basil
- 1 teaspoons - fish sauce
- 2 teaspoons - gluten-free soy sauce
- 1 tablespoons - coconut oil, sesame oil, or olive oil
Directions:
Cut cauliflower into large chunks, and then chop in a food processor until the pieces are roughly the size of rice. Cook the pork (or other meat of choice) in the oil of choice and set aside. Beat the eggs gently and then cook like a thin omelet - then set aside.
Chop the onion and mushroom. Add oil to the pan, and then cook the onion until translucent. Add the mushroom, and cook until soft and tasty. Add the cauliflower, ginger, fish sauce, and soy sauce. Cover and cook for 5 minutes on medium-low until cauliflower is soft. Return the meat and egg to the pan and stir fry for a minute on medium-high or high heat. Remove from heat and mix in cilantro, basil, and scallions. Serve with Sriracha or other delicious sauce.
