Ingredients:
- 1 1/2 cups - sugar
- 5 tablespoons - instant powdered pectin
- 8 - apricots (about 3-1/2 cups) pitted and finely chopped
- 2 tablespoons - tangerine juice OR orange juice
- 4 - half-pint freezer-safe containers
Directions:
1. In a large bowl stir together sugar and pectin. Add apricots and juice; stir for 3 minutes.
2. Ladle jam into 4 clean half-pint freezer-safe containers, leaving a 1/2-inch headspace. Seal and label.
3. Let stand at room temperature for 30 minutes. Store in the freezer for up to 1 year or in the refrigerator for up to 3 weeks.
