Ingredients:
- 1 3/4 cups - unsifted flour
- 2 1/2 tablespoons - sugar
- 2 1/2 teaspoons - baking powder
- 1 teaspoons - salt
- 1/4 cups - vegetable shortening
- 1/4 cups - creamy peanut butter
- 1 - egg slightly beaten
- 3/4 cups - milk
- 2 tablespoons - apricot preserves or up to 1 tablespoon more, as needed
Directions:
Sift together flour, sugar, baking powder and salt; cut in shortening and peanut butter with a pastry blender.
Add egg and milk (do not over stir).
Spoon into greased muffin tins, and top each muffin with 1/2 teaspoon preserves.
Bake at 375 degrees F for 25 minutes.
