Apricot Peanut Butter Muffins

Ingredients:

  1. 1 3/4 cups - unsifted flour
  2. 2 1/2 tablespoons - sugar
  3. 2 1/2 teaspoons - baking powder
  4. 1 teaspoons - salt
  5. 1/4 cups - vegetable shortening
  6. 1/4 cups - creamy peanut butter
  7. 1 - egg slightly beaten
  8. 3/4 cups - milk
  9. 2 tablespoons - apricot preserves or up to 1 tablespoon more, as needed

Directions:

Sift together flour, sugar, baking powder and salt; cut in shortening and peanut butter with a pastry blender.

Add egg and milk (do not over stir).

Spoon into greased muffin tins, and top each muffin with 1/2 teaspoon preserves.

Bake at 375 degrees F for 25 minutes.
