Apricot Brown Betty

Ingredients:

  1. 1 cups - dried apricot halves
  2. 1/2 cups - dark-brown sugar
  3. 1 1/2 cups - water
  4. 2 cups - fresh bread cubes
  5. 2 tablespoons - butter or margine
  6. - ground cinnamon
  7. - ground ginger
  8. - light cream or whipped cream

Directions:

About 1-1/2 hours before serving:
(1) In a medium saucepan, simmer apricot halves, brown sugar and water, covered, 20 minutes.
(2) Start heating oven to 350F
(3) In 1-quart casserole, place half of bread cubes; dot with half of butter; top with several dashes of cinnamon and ginger to taste. Top with hot apricot halves, lightly drained. add remaining bread cubes; top with butter, cinnamon and ginger as before. Pour syrup used to cook apricots over bread cubes.
(4) Bake 30 minutes, or until brown. Cool until serving time. To serve: ass light cream or top each serving with a dab of whipped cream.
