    Toss 1 pound of halved baby potatoes with a little olive oil, rosemary, salt and pepper. Add to pan and roast with the pork to make a complete meal in one pan.

Ingredients:

  1. 3 cloves - garlic minced
  2. 1 tablespoons - fresh rosemary finely chopped
  3. 3/4 teaspoons - salt
  4. 1/4 teaspoons - pepper
  5. 1 1/4 pounds - pork loin trim excess fat
  6. 2 tablespoons - apricot jam
  7. 2 tablespoons - dijon mustard

Directions:

Preheat oven to 400 degrees. Cover roasting pan with foil or nonstick spray.

Stir together garlic, rosemary, salt and pepper in small bowl. Rub mixture over pork, place in pan and roast 30 min.

Mix jam and mustard and brush all over pork. Continue to roast untill temp registers 160 degrees, about 10 more minutes. Transfer to cutting board, let stand for 10 minutes and slice for serving.
