Ingredients:
- 1/3 cups - Butter softened
- 2/3 cups - Brown sugar packed
- 1/2 teaspoons - Ground cinnamon
- 1/4 teaspoons - Baking soda
- 1 - Egg
- 1/2 cups - Applesauce unsweetened
- 1 1/4 cups - All Purpose Flour
- 1 1/4 cups - Rolled oats
Directions:
Preheat oven to 375 deg.
In a medium mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar cinnamon and baking soda. Beat till combined, scraping sides of bowl. Beat in egg and applesauce till combined. Beat in as much of the flour as you can with the mixer. Stir in the remaining flour and the rolled oats.
Drop dough by rounded teaspoon 2 inches apart on an ungreased cookie sheet.
Bake in a 375 deg. oven for 8-10 minutes or till lightly browned. Transfer cookies to a wire rack and let cool.
