Notes:
Batter will keep covered in refrigerator for several days. Makes 3-4 dozen regular size muffins.

Ingredients:
- 1 cups - butter
- 2 cups - sugar
- 2 - eggs beaten
- 2 cups - applesauce
- 2 teaspoons - baking soda
- 4 cups - flour
- 1 tablespoons - cinnamon
- 1 tablespoons - allspice
- 2 tablespoons - vanilla
Directions:
Cream together the butter and sugar; add beaten eggs and mix until thoroughly combined.
Heat applesauce and stir in baking soda. Add alternately with flour, spices and vanilla to the creamed butter mixture.
Bake at 375 degrees F in greased muffin tins until light brown, approximately 15-20 minutes for full size muffins (or about 12 minutes for mini-muffins) .
