Applesauce Bread

    Applesauce Bread with Walnuts and Raisins; makes two Loaves. This is akin to banana bread, and inspired by a favorite banana bread recipe. I created it in desperation one time when I had committed to making several loaves of banana bread only to find that some of the bananas had overripened past usability. I decided to try applesauce which I had on hand. Since I was using applesauce, I added a touch of cinnamon.

Ingredients:

  1. 2 cups - Unsweetened applesauce
  2. 4 whole - Eggs
  3. 1 1/2 cups - Sugar I like to use raw sugar
  4. 4 cups - Flour I like to use unbleached
  5. 1 1/2 teaspoons - Salt
  6. 2 teaspoons - Baking soda
  7. 2 teaspoons - Ground cinnamon
  8. 1 cups - Chopped walnuts
  9. 1 cups - Raisins

Directions:

Prepare 2 lightly greased glass or ceramic loaf pans, approximately 1½ quart
(8½"x4½"x2½".)

Heat oven to 350F.

Mix the flour, salt, soda, and cinnamon in a bowl. In a mixing bowl, blend the applesauce and the eggs until creamy, add the sugar, again blending until smooth. Slowly add the flour mixture.

When the batter has been thoroughlymixed, stir in the nuts and raisins.

Divide evenly between the two loaf pans. Bake at 350F for 60-75 minutes. A cake tester inserted in the center should come out clean.

Serve hot or cooled as you prefer. This is very nice served with unsalted butter, but that does tend to reduce some of the ostensible healthy character of the bread :-)

This recipe can be easily halved to make a single loaf if you wish, or doubled.
