Ingredients:
- 2 - medium tart apples (such as Granny Smith)
- 3 tablespoons - mayonnaise
- 1 1/2 teaspoons - cider vinegar
- 1/2 teaspoons - sugar
- 2 tablespoons - thinly sliced green onion
- 4 slices - cinnamon-raisin bread, challah bread, or seeded artisan wheat bread
- 1 cups - shredded, cooked chicken breast
- 4 ounces - sharp white cheddar cheese sliced
Directions:
Preheat broiler. Core apples and cut into very thin bite-size strips.
In a bowl, stir together mayonnaise, vinegar and sugar. Add apples and green onion; stir to coat.
Arrange bread slices on a baking sheet. Broil four to five inches from heat for about 2 minutes or until toasted; turn slices over and broil about 1 minute more or just until starting to toast.
Top bread with chicken and cheese slices. Broil about 1 minute or until cheese is melted.
Remove from oven; top with apple mixture. Serve immediately.
