Apple-Raisin Bread

Ingredients:

  1. 3 cups - Apples chopped, unpared
  2. 3 cups - Flour
  3. 1 1/2 cups - Vegetable Oil
  4. 1/2 cups - Sugar
  5. 4 whole - Eggs beaten
  6. 1 tablespoons - Vanilla
  7. 1 teaspoons - Vanilla
  8. 2 teaspoons - Cinnamon
  9. 1 1/2 teaspoons - Salt
  10. 1 1/2 teaspoons - Baking Soda
  11. 1 teaspoons - Ground Cloves
  12. 1/2 teaspoons - Baking Powder
  13. 2/3 cups - Raisins
  14. 1/2 cups - Nuts chopped

Directions:

Preheat oven to 325°. Generously grease the bottom only of two 9" x 5" x 3" baking pans.

Beat all ingredients on slow, scraping the bowl frequently, for 1 minute. Then beat on medium for another minute. Pour batter into prepared pans.

Bake until toothpick comes out clean - about 1 hour. Cool for 10 minutes before removing from pan. Cool completely before slicing. Store in the refrigerator.
