Apple Pie Finger Fries

Ingredients:

  1. 2 - pie crusts
  2. 3 cups - apples peeled, cored, finely chopped
  3. - juice from 1 lemon
  4. 2 cups - water
  5. 1/2 cups - packed brown sugar
  6. 1/4 cups - cornstarch
  7. 1 teaspoons - vanilla
  8. 1 teaspoons - cinnamon
  9. pinchs - kosher salt
  10. 2 - eggs beaten
  11. 2 tablespoons - sanding or turbinado sugar
  12. - caramel dip optional, for serving with

Directions:

Preheat oven to 350 degrees F and line a large baking sheet with parchment paper (or grease the pan).

In a medium bowl, squeeze lemon juice over chopped apples to keep them from browning.

In a medium saucepan over medium heat, combine water, brown sugar, cornstarch, cinnamon, vanilla and salt; whisk until combined.

Add apples and bring mixture to a boil, stirring frequently. Cook about 10 minutes or until apples are tender. Set aside to cool.

Spread one pie crust out on prepared baking sheet; spread apple mixture over pie crust and place second pie crust on top.

Brush with egg wash and sprinkle with sugar. Use a pizza cutter to cut into strips (or fry shapes).

Bake in preheated oven for 20 minutes, until crust is golden. Serve with caramel for dipping, if desired.
