Mother’s hints: 1. Use granny smith, red delicious, fuji, or staymen apples. You want a hard apple. The tarter the better although red delicious are sweet. If you are using a sweeter apple, cut down on the sugar you mix with the flour. 2. You will want to shield the edges of the pie so they don’t burn. If you live in the US, you can get a pie shield at a bed, bath, and beyond store or at an upscale kitchen store. I have also seen them at the grocery store but that siting is rare. If you don’t have a pie shield, use aluminum foil. Cut a piece about 2 inches long and fold it over until it is about 3⁄4 inches wide. Mold the AL foil around the edges.

Ingredients:
- 1/3 cups - White Sugar You can increase up to 2/3 cups of sugar if desired.
- 1/4 cups - All-Purpose Flour
- 1/2 teaspoons - Ground Nutmeg
- 1/2 teaspoons - Ground Cinnamon
- 8 - Medium Sized Apples
- 2 tablespoons - Butter Margarine can be used if desired, but Mom uses butter.
- 1 - Egg
- 1 teaspoons - White Sugar
- 1/4 teaspoons - Cinnamon
Directions:
1. Heat oven to 425
2. Peel and slice 5 apples. Cut more as you need them.
3. Mix first 4 ingredients together
4. Layer the cut apples into the pie dish. (crust is already in dish) Cover the bottom of the dish with apples (about 1.5 apples).
5. Sprinkle about 3 tablespoons of sugar mixture over apples
6. Cut up 1⁄2 teaspoon of butter into small pieces and drop over apples
7. Repeat steps 4, 5, and 6 until you have used all the apples or have a mound of apples in the pie dish.
8. Cover apples with crust and seal the edges by pinching the top and bottom crust together
9. Separate the yoke and egg white. Throw out the yoke or give it to your dog.
10. Mix egg white with mixer or with fork for a minute or so
11. Rub egg white mixture over the top crust with either a brush or clean hands. You will not use all the egg white mixture. Just throw out the left over egg white or give it to your dog
12. Mix last 2 ingredients together (sugar and cinnamon) and sprinkle over the top crust
13. Cut 4 -8 small slits in the top with a knife to allow steam to exit.
14. Put in oven and cook for 15 minutes
15. After 15 minutes, lower oven temperature to 350 and cook for 40 to 50 minutes until crust is brown
