Notes:
Mother’s hints: 1. Grandma used to freeze the individual portions until she needed them. They will hold in the freezer for about 5 months. Wrap them in wax paper if you have it, if not, use what you have and then store them in a ziplock bag in the freezer. 2. When you are ready to use the frozen crust, let it thaw for about an hour. Do NOT use heat to quickly thaw the dough. It is ready to be rolled out when you can squish it flat with palm of your hand. 3. If you want to use the dough immediately, cool the dough ball in the refrigerator for at least an hour. 4. Things will go best if you have a rolling pin. If you don’t, use a jar or can with a smooth surface. 5. Put about 3⁄4 cup of additional flour on the counter. Roll the dough to about a 5 inch diameter, turn it over. Coat both sides with flour. Repeat rolling until you have the size you want. Assume you want a crust that it is 3 inches larger than the bottom of the pie plate. 6. To move the crust from the counter to the plate, fold the circle in half and then again in half (quarters). Pick it up, place it in the pie dish and unfold it. 7. If you mess up on any of these steps , you can always ball it up again and start all over again.
