Ingredients:
- 3 pounds - Bartlett pears peeled, roughly chopped
- 2 pounds - Gala apples peeled, roughly chopped
- 1 cups - dark brown sugar firmly packed
- 1/2 teaspoons - sea salt
- 1/4 teaspoons - cinnamon
- 1/2 cups - pecan pieces
Directions:
Work in batches to process the pears, and then the apples, in a food processor with a steel blade until coarsely grated. Place all fruit in a 5-quart slow cooker with the brown sugar, salt and cinnamon. Toss to combine.
Cover and cook on low heat until tender (about 8-10 hours - consider doing overnight), or on high heat for 4-6 hours.
Transfer mixture to food processor and process in batches until smooth. Return to the slow cooker and cook on high, uncovered, until thickened, about 60 to 90 minutes, stirring occasionally.
Process pecans in food processor until a very smooth paste forms. Add most of the cooked apple-pear mixture (the processor might not hold all of it) and process until thoroughly combined. Stir the mixture into the remaining apple-pear mixture until all is combined well.
Let cool, then place in jars with tight-fitting lids. These can be frozen for up to 3 months or kept refrigerated for up to 3 weeks.
Makes about 4-1/2 cups.
