Apple Muffins

Ingredients:

  1. 2 cups - sugar
  2. 2 - eggs
  3. 1 cups - oil
  4. 1 tablespoons - vanilla
  5. 3 cups - flour
  6. 1 teaspoons - salt
  7. 1 teaspoons - baking soda
  8. 1 teaspoons - cinnamon
  9. 3 cups - apples peeled, cored, diced
  10. - brown sugar for topping, optional

Directions:

Preheat oven to 350 degrees F. Line muffin pan with paper liners or spray with non-stick baking spray.

Cream together sugar, eggs, oil and vanilla. In a separate bowl combine flour, baking soda, salt, and cinnamon; add dry ingredients to creamed mixture and mix thoroughly. Batter will be very thick; stir in the diced apples.

Fill muffin tins almost to the top, about 3/4 full. (If desired, sprinkle tops with brown sugar).

Bake for 20-24 minutes until lightly browned.
