Apple Gorgonzola Salad

Ingredients:

  1. 8 ounces - romaine lettuce chopped
  2. 1 - Granny Smith apple chopped
  3. 2 tablespoons - gorgonzola cheese crumbled
  4. 2 ounces - spiced walnuts chopped
  5. 1/4 cups - dried cranberries
  6. 1/2 cups - Italian vinaigrette recipe below
  7. 1/3 cups - white wine vinegar
  8. 3/4 cups - olive oil
  9. 1 teaspoons - salt
  10. 3/4 teaspoons - oregano
  11. 1/2 teaspoons - dry mustard
  12. 1/8 cups - red onion finely chopped
  13. 1 1/2 teaspoons - chopped garlic
  14. 1 pinchs - black pepper

Directions:

1. Wash and dry lettuce in a colander.

2. Chop lettuce into 1-inch thick slices.

3. Slice off 2 sides of an apple along the side of the core.

4. Cut long slices for garnish.

5. Remove the core and dice the rest of the apple.

6. Mix all ingredients for the dressing in a small bowl.

7. Pour over the lettuce.

8. Add apples, walnuts, cranberries and cheese.

9. Toss well.

10. Place remaining sliced apples on top for garnish.
