Ingredients:
- 1 - 9-inch pastry shell OR homemade pie crust recipe below unbaked, chilled
- Apple Filling
- 6 cups - apples sliced, peeled
- 1/2 cups - granulated sugar
- 1 teaspoons - ground cinnamon
- Crumb Topping
- 1 cups - flour
- 1/2 cups - brown sugar firmly packed
- 1/8 teaspoons - salt
- 1/2 cups - butter softened, sliced
- Pie Crust
- 1 1/4 cups - Flour
- 1/4 teaspoons - Salt
- 1/3 cups - Shortening
- 5 tablespoons - Cold water Or more if needed
Directions:
If making your own pie crust, use the ingredient measurements above for Pie Crust, and combine the flour and salt; cut the shortening into the mixture with a pastry blender or two forks until mixture resembles coarse meal. Add 4 tablespoons of very cold water and stir, pressing to combine. Add water a little more at a time until mixture can be pressed into a ball shape - not too much water or it will be too sticky to roll out.
If using storebought pie crust, set chilled crust out at room temperature for a bit for easy rolling. Roll out the pie crust and place it into your pie pan, pressing gently to the bottom and up the edges. Pinch (or flute) the edges around top edge for decoration.
For pie filling - combine apples with sugar and cinnamon and mix gently to cover apples well. Pour apple mixture into chilled crust.
For crumb topping: combine flour, brown sugar, salt and butter; blend with pastry blender or crumble with fingers until mixture is blended well and is coarse. Sprinkle crumb topping over apples.
Bake at 375 degrees F until apples are tender and topping is lightly browned, about 50-60 minutes; lay some aluminum foil gently over the top if the top and crust edges start to brown too much before pie is baked through.
Serve with vanilla ice cream for an especially tasty treat!
